Basically it’s most common meaning refers to waste-wood material that is used to separate/secure cargo, so as to prevent damage, as was commonly used on barges in 19th and early 20th century. Driftwood is/was often dunnage wood. Now air-filled bags or rubber/plastic material is used to protect/separate cargo, still known as dunnage bags. Less commonly, Dunnage (sometimes spelt with one 'n') is also considered a derivative of Dunwich, the Suffolk village originated by the Anglo-Saxons, originally a thriving port.
